Indian Spiced Potatoes & Cauliflower

Ingredients

  • 1 head cauliflower, cut into 1-inch pieces
  • 2 lbs russet potatoes, diced into 1/2 inch pieces
  • 1 medium yellow onion, diced
  • 2 15 oz cans petite diced tomatoes
  • 1 Tbsp granulated garlic
  • 2 Tbsp garam masala
  • 2 Tbsp salt
  • 2 tsp powdered ginger
  • 2 tsp powdered cumin
  • 2 tsp turmeric powder
  • 1/2 cup vegetable oil

Instructions

  1. Thoroughly combine all ingredients in a slow cooker or a large pot.

  2. For slow cooker, cook on low for 8 hours or high for 4 hours. For stovetop option cook on low for about 2 hours.

  3. Serve hot with white or brown rice.
