Sun-dried Tomato Hummus

Ingredients

  • 2 cans drained chickpeas, unsalted
  • 3/4 cup water
  • 1/2 cup sundried tomatoes in oil w/ liquid
  • 2 Tbsp lemon juice
  • 2 Tbsp peanut butter
  • 6 Tbsp olive oil
  • 1 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 4 shakes black pepper

Instructions

  1. Add all ingredients to food processor.

  2. Puree for 5 minutes. Scrape sides.

  3. Puree for 3-5 more minutes.
